This is a bonus, short-but-sweet post in case you’re looking for a delicious way to use up some of your leftover turkey meat from Thanksgiving.
Use a good crusty bread, layer some turkey meat, a smear of homemade cranberry sauce and a generous portion of grated Gruyere cheese to hold it all together. I’m trying really hard not to drool right now.
Then tuck it into a panini press. If you don’t have a panini press, don’t let that stop you. I used to make these in a grill pan with a heavy pot on top of the sandwich before I got a panini press. You could even toast it under the broiler. Whatever the case, you need to make this.
Now…I need to go get another turkey so I can have some more of these! I’ve eaten one every day for lunch along with some leftover roasted butternut squash soup. And I’m now out of both…and I’m worried about withdrawals…
